Fudgsicles for the Health Conscious Kid at Heart

Did anyone else love fudgsicles growing up? It was a summer staple in my house, but as I got older they were fewer and far in between. I have found a healthy recipe from Kris Carr that mimics the creamy, chocolatey goodness of the famous fudgsicle. Plus it's so simple, it's only three ingredients!

  • 2 ripe avocados (Source of healthy fat)
  • 1/2 cup male syrup (Source of trace minerals)
  • 1/4 raw cacao powder (Source of antioxidants)

Remove pit and scoop avocado out of its shell. Combine all three ingredients into a blender. Spoon mixture into popsicle forms to the top and freeze for a minimum of 4 hours. This recipe yields approximately four servings based on the size of your popsicle forms.

Classic Barbeque gone Vegan: Sweet Potato Quinoa Black Bean Burgers

Adapted from the Minimalist Baker, these Sweet Potato Quinoa Black Bean Burgers are guaranteed to satisfy. It is important to education yourself on reasons people choose to eat vegan or commit to the vegan lifestyle. Understanding where why people do what they do will help you make an informed decision for yourself, but it will also allow you to speak about the subject from a place of knowledge and not ignorance.

  • Ethical Treatment of Animals: conventional livestock are forced to live in crowded pens and in confined spaces that are rarely cleaned.
  • Environmental Impact: Life stock use a huge amount of water, far more then plant based crops. They also release large amounts of methane gas into the environment.
  • Quality of Meat: Although not everyone does well on a vegan diet, the quality of meat consumed is a huge factor of good health. Many conventional factory farm livestock productions feed their animals hormones to increase their growth, antibiotics to prevent sickness (since they are housed closely in large numbers, disease spreads quickly and is far reaching) and grains that allow the animal to gain weight very quickly. All of these harmful substances then end up in us! They impact our natural hormones and immune system.

Ingredients

  • 2 large mashed sweet potatoes
  • 1 cup cooked black beans
  • 1 1/2 cups cooked quinoa
  • 1/2 cup walnut meal (or very finely chopped)
  • 1/2 cup finely diced green onion
  • 1/4 tsp. salt (add a little more if the black beans were unsalted)
  • 1/4 tsp. pepper
  • 2 1/2 tsp. ground cumin
  • 1 tsp. smoked paprika
  1. Cut sweet potatoes in half and place face down. Bake at 400 degrees for approximately 30 minutes or until tender enough to mash. 
  2. Rise quinoa and cook according to package instructions.
  3. Add salt to water and cook black beans according to package instruction. If you use canned black beans, place in sieve and rinse them thoroughly.
  4. Combine all ingredients into a large bowl.
  5. Line baking sheet with parchment paper.
  6. Place approximately 1/4 cup of the mixture onto the parchment paper. A tip from the minimalist baker is that the thinner you press the burgers the faster the will cook.
  7. Bake burgers for 30-45 minutes at 400 degrees.

Serve on buns of your choice. Dress up your burgers with avocado, caramelized onions, sautéed mushrooms or your choice of sauces. Try Neal Brothers Classic BBQ Sauce.
