Carob Candy Cane Bark

I love using candy canes in my holiday baking, they add the perfect peppermint crunch to my bark. I love bringing this to holiday parties because it is really healthy without compromising on sweetness and flavor. You can get festive with Carob Candy Cane Bark guilt free! Prep time: 15min | Inactive prep time: 2hrs and overnight* | Serving size: 1 gimormous bar!
 
Ingredients:
  • 1 cup candy cane bits (TruJoy makes all natural, corn syrup free candy canes) 
  • 1 cup carob powder
  • 1/8 tsp green powder stevia
  • ½ tsp peppermint extract
  • 1/2 cup coconut oil, melted
 
Directions:
  1. Line a loaf pan with parchment paper and evenly spread ¾ of the candy cane bits along the bottom of the pan.
  2. In a medium bowl mix the carob and stevia powder. Add the coconut oil and peppermint extract and stir until smooth; this mixture should be very drippy.
  3. Pour the chocolate over the candy cane bits and sprinkle with the remaining ¼ cup of candy cane bits. Place in the freezer to set for 2 hours.
  4. Serve cold, straight out of the freezer and do not leave at room temperature for too long or else they may start to melt!
