Pumpkin Spice Muffins (paleo, gluten free)

There is something so comforting about the combination of creamy pumpkin with warming spices. 

Pumpkin is one of natures underestimated vegetables with incredible health benefits! It's low in calories, yet high in vitamins, minerals and fibre. Because of the creamy, moist texture, I will often substitute for it year round in recipes that call for lots of oil or butter. 

With pumpkin spice flavoured drinks and baked goods popping up everywhere, I wanted to create a healthier version that would satisfy my craving for fall flavours. 

As the weather cools down, I love warm muffins for breakfast, but I want to ensure I'm getting enough protein and fibre in the morning to sustain me without the blood sugar rush.

These pumpkin spice muffins are made with a low carb coconut flour, sweetened with a touch of natural maple syrup and high in protein; a couple spread with almond butter or ghee keeps me happy until lunch! 

5 Eggs
1 cup of pumpkin puree (I used Eden Organic BPA free) 
1/4 cup of coconut oil 
1/2 cup of coconut flour (I like Cocovie) 
1 tsp. of baking soda 
1 tsp. of vanilla
1/4 cup. of pure maple syrup 
1 tsp. of cinnamon 
1/2 tsp. each of of ground ginger and cloves 
Preheat your oven to 400 degrees. Mix all ingredients in a food processor until combined (alternatively you could also use a large mixing bowl and whisk very well). If the batter comes out too thick, add a touch of almond milk or water to thin (not too much!) Place a 1/4 cup scoop of batter into lined or greased muffin tins. Bake for 15-17 minutes until set. 
Optional: Add in raisins, pecans or chocolate chips.
