Use your favourite baking apples for this simple and satisfying apple crisp sweetened with maple syrup.
Preheat oven to 350 degrees F.
Slice apples (we like ours with the peel) and toss in a large bowl with 1/4 cup maple syrup, 1 tsp. cinnamon, nutmeg, nuts (if using) and a dash of salt. Spoon mixture into a large casserole dish.
In a smaller bowl, combine the oats, 1/2 cup maple syrup, coconut oil and 1 tsp. cinnamon. Sprinkle over the apples.
Bake for 40 to 45 minutes. The apples should be soft but still holding their shape and the oats golden.
Serves 6 to 8
Enjoy warm as a dessert or try for breakfast with some Greek Yogurt or Kefir.
