Spiralized Salad with a Raspberry Vinaigrette

Lazy, hot summer days are the perfect time to enjoy a variety of raw foods. Studies prove that incorporating raw foods into your diet have amazing health benefits including higher concentrations of vitamins, minerals, fibre and water. 

Try mixing up a basic lettuce salad by throwing in unexpected flavours and textures for an ultra satisfying meal.   

Salad Ingredients:

1 Zucchini

1 pear

2 cups. lightly packed spinach

1 handful of almonds, chopped

1 Large handful of dried apricots, sliced into pieces

Vinaigrette

2 Tbsp. of avocado oil

1 tsp. of apple cider vinegar

6 raspberries

1 Tbsp. of real maple syrup

Directions:

1. In a medium sized bowl, combine all salad ingredients. 

2. In a blender, add vinaigrette ingredients and mix until smooth.

3. Pour dressing over salad just before serving.
